Morning Swing is our selection for easy going espressos: we select rich, flavourful lots with comforting profiles. Right now, we're heading to Brazil's Cerrado region for a selection of two farms offering smooth cups with deep caramel notes.
In the sun-drenched highlands of the Cerrado Mineiro, two seasoned producers have combined their expertise to achieve excellence in coffee: Dair Assis Fava, of Fazenda Quilombo, and José Adalberto Guimarães Cardoso, of Fazenda Aroeira. Together, they cultivate the exceptional Yellow Bourbon variety at altitudes of up to 1,136 metres. The region’s stable climate and highly fertile soils provide the ideal environment for the coffee cherries to develop a sophisticated flavour profile.
The focus is on meticulous natural processing. By allowing the cherries to dry in the sun or using controlled mechanical methods, the coffee retains its intense natural sweetness and a full, syrupy body.
