He works alongside his wife Luz Helena Salazar and their two sons, Carlos and Felipe Arcila at the Casa Negra farm. Jairo loves to start his days with a good breakfast, but above all he enjoys spending time with his family.
This microlot is 100% Caturra, harvested according to strict ripeness criteria and then floated and hand-sorted to remove any defects. The cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was gently washed and then dried in temperature-controlled conditions until the ideal moisture content was achieved.
