Located in Gigante, Huila, Los Patios is a coffee processing and research centre, tackling issues such as inconsistent processing and limited infrastructure for local producers. As the centre specialises in innovative coffee fermentation techniques, this batch was processed using an unusual method: the cherries are first fermented for 12 hours before being de-pulped. Coffee cherry ‘juice’ is then added to the green coffee for 5 hours of aerobic fermentation, before being sealed for 12 hours of anaerobic fermentation. The coffee is then dried in a greenhouse for 12 to 16 days until it reaches target moisture. The result is impressive, bringing out the best in the Castillo variety.
